Plongez-y les haricots et laissez cuire pendant 20 minutes \u00e0 petites \u00e9bullitions. Salez et poivrez en fin de cuisson. Laissez refroidir dans le jus de cuisson.<\/p>\n\n\n\n<p>Pendant ce temps, pelez les oignons et ciselez-les. Coupez les harengs fum\u00e9s en morceaux. Rincez le persil.<\/p>\n\n\n\n<p>Pr\u00e9parez la vinaigrette: m\u00e9langez la moutarde et le vinaigre. Incorporez l&rsquo;huile d&rsquo;olive en \u00e9mulsionnant.<\/p>\n\n\n\n<p>Dans un plat de service, m\u00e9langez les haricots pr\u00e9alablement \u00e9goutt\u00e9s, le hareng fum\u00e9, les olives noires. Ajoutez les oignons et le persil cisel\u00e9s. Arrosez de vinaigrette, m\u00e9langez et ajustez l&rsquo;assaisonnement si n\u00e9cessaire.
