Et pour cause. <\/p>\n\n\n\n<p>Sa chair ferme et savoureuse font de la sole un poisson incontournable de la gastronomie fran\u00e7aise. <\/p>\n\n\n\n<!--more-->\n\n\n\n<p>P\u00each\u00e9es essentiellement en mer du Nord, Baltique, Manche et sur les c\u00f4tes de l\u2019Atlantique, vous la retrouvez sur les \u00e9tals du mois d&rsquo;avril au mois d&rsquo;octobre. <\/p>\n\n\n\n<p>Pour cette recette de saison, j&rsquo;ai choisi de la par\u00e9e d&rsquo;un crumble de noisettes, sur un lit de courgette. Lavez et s\u00e9chez le persil, puis ciselez-le finement (conservez l&rsquo;\u00e9quivalent d&rsquo;une cuill\u00e8re \u00e0 soupe pour la suite de la recette). Concassez grossi\u00e8rement les noisettes, r\u00e9duisez le pain de campagne en chapelure.<\/p>\n\n\n\n<p>Pr\u00e9chauffez votre four \u00e0 200\u00b0C.<\/p>\n\n\n\n<p>Dans une jatte, r\u00e9unissez les noisettes concass\u00e9es, la chapelure de pain de campagne, le parmesan r\u00e2p\u00e9, l&rsquo;ail et le persil. Ajoutez le beurre froid pr\u00e9alablement coup\u00e9 en d\u00e9s et m\u00e9langez du bout des doigts jusqu\u2019\u00e0 obtention d\u2019une p\u00e2te friable. <\/p>\n\n\n\n<p>R\u00e9partissez le crumble de noisettes sur les soles et r\u00e9servez.<\/p>\n\n\n\n<p>Disposez une feuille de papier cuisson dans un plat allant au four. Lavez et tranchez finement les courgettes (\u00e0 l&rsquo;aide d&rsquo;une mandoline si vous en \u00eates \u00e9quip\u00e9). <\/p>\n\n\n\n<p>Pelez et ciselez la derni\u00e8re gousse d&rsquo;ail. Tapissez le plat de rondelles de courgette.
