Ajoutez le beurre et mettez \u00e0 chauffer. D\u00e8s les premiers signes d&rsquo;\u00e9bullitions, versez la polenta. M\u00e9langez bien \u00e0 l&rsquo;aide d&rsquo;une spatule. Incorporez le parmesan r\u00e2p\u00e9 et m\u00e9langez de nouveau. Salez et arrosez d&rsquo;un filet d\u2019huile d\u2019olive. \u00c9talez la pr\u00e9paration dans un plat pr\u00e9alablement recouvert de papier sulfuris\u00e9, sur environ 1,5 cm de hauteur. <\/p>\n\n\n\n<p>Laissez refroidir \u00e0 temp\u00e9rature ambiante durant 30 minutes, puis entreposez 1 heure au r\u00e9frig\u00e9rateur. <\/p>\n\n\n\n<p>Pass\u00e9 ce temps, pr\u00e9chauffez le four \u00e0 200 \u00b0C.<\/p>\n\n\n\n<p>Coupez la polenta en d\u00e9s et r\u00e9partissez-les sur une plaque de cuisson pr\u00e9alablement recouverte de papier sulfuris\u00e9. Enfournez pour 20 minutes de cuisson.<\/p>\n\n\n\n<p>A la sortie du four, salez les cro\u00fbtons et r\u00e9servez.<\/p>\n\n\n\n<p>Lavez et s\u00e9chez la roquette, les tomates cerises et le basilic.<\/p>\n\n\n\n<p>R\u00e9partissez la roquette dans vos assiettes de service. Ajoutez les tomates cerises, les olives vertes et le basilic cisel\u00e9.
