Et je dois avouer que le th\u00e8me \u00ab\u00a0les fruits d&rsquo;automne \u00e0 coques\u00a0\u00bb m&rsquo;a particuli\u00e8rement inspir\u00e9e.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>J&rsquo;ai donc opt\u00e9 pour un velout\u00e9 de ch\u00e2taignes, agr\u00e9ment\u00e9 de chips de poire &amp; de noix torr\u00e9fi\u00e9es. D\u00e9posez les tranches de fruit sur une plaque de four pr\u00e9alablement recouverte de papier sulfuris\u00e9. Enfournez pour 01h30 de cuisson, en retournant les chips \u00e0 mi-cuisson.<\/p>\n\n\n\n<p>Pendant ce temps, portez le bouillon de volaille \u00e0 \u00e9bullition dans une casserole. Ajoutez-y\u00a0 les ch\u00e2taignes et laissez cuire 15 min \u00e0 couvert.<\/p>\n\n\n\n<p>Concassez les cerneaux de noix. D\u00e9posez-les dans un po\u00eale et mettez \u00e0 chauffer \u00e0 sec, afin de les faire torr\u00e9fier durant environ 05 minutes sur feu vif.<\/p>\n\n\n\n<p>Une fois les ch\u00e2taignes cuites, d\u00e9posez-les dans le bol de votre robot. Ajoutez la cr\u00e8me liquide et mixez jusqu\u2019\u00e0 obtention d&rsquo;un velout\u00e9 onctueux. Salez, poivrez et assaisonnez de noix de muscade r\u00e2p\u00e9e.<\/p>\n\n\n\n<p>Lorsque les chips de poire sont pr\u00eates, sortez-les du four et laissez-les refroidir 05 minutes.<\/p>\n\n\n\n<p>Transvasez le velout\u00e9 dans la casserole et r\u00e9chauffez \u00e0 feu doux.<\/p>\n\n\n\n<p>Au moment de servir, versez le velout\u00e9 dans des bols, puis parsemez de cerneaux de noix torr\u00e9fi\u00e9es.
