Mais pour \u00e9quilibrer cette profusion de saveurs, la tradition culinaire indienne a cr\u00e9\u00e9 un accompagnement aussi simple que g\u00e9nial : la ra\u00efta.<\/p>\n\n\n\n<p>Ce condiment \u00e0 base de yaourt, souvent agr\u00e9ment\u00e9 de concombre r\u00e2p\u00e9, d\u2019herbes fra\u00eeches et d\u2019\u00e9pices torr\u00e9fi\u00e9es, est bien plus qu\u2019un simple \u00ab\u00a0side dish\u00a0\u00bb. Il incarne une philosophie culinaire mill\u00e9naire, celle de l\u2019\u00e9quilibre des saveurs et des \u00e9nergies, ch\u00e8re \u00e0 l\u2019Ayurveda, l\u2019ancienne m\u00e9decine indienne.<\/p>\n\n\n\n<p><strong>Origines de la ra\u00efta : entre tradition et \u00e9quilibre<\/strong><\/p>\n\n\n\n<p>La ra\u00efta tire son nom du mot sanskrit <em>rajika<\/em>, qui signifie \u00ab\u00a0moutarde\u00a0\u00bb, bien que la version actuelle utilise rarement cette \u00e9pice. On la retrouve mentionn\u00e9e dans des textes ayurv\u00e9diques anciens, o\u00f9 le lait ferment\u00e9, le caill\u00e9 et le yaourt sont souvent conseill\u00e9s pour apaiser le feu digestif g\u00e9n\u00e9r\u00e9 par les aliments trop piquants ou lourds.<\/p>\n\n\n\n<p>\u00c0 l\u2019\u00e9poque moghole, la ra\u00efta devient un plat \u00e0 part enti\u00e8re des banquets royaux. Lavez, pelez, r\u00e2pez et pressez-le pour en extraire l\u2019eau. <\/p>\n\n\n\n<p>Dans un saladier, fouettez le yaourt jusqu\u2019\u00e0 ce qu\u2019il devienne lisse. Ajoutez les \u00e9pices. Incorporez le concombre et les herbes. M\u00e9langez. <\/p>\n\n\n\n<p>Laissez reposer 30 minutes au r\u00e9frig\u00e9rateur pour une meilleure diffusion des saveurs.
