Elle constituait la base des tartes au citron de l&rsquo;\u00e9poque.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>La recette initiale, quant \u00e0 elle, s&rsquo;appelait en r\u00e9alit\u00e9 \u00ab\u00a0lemon cheese\u00a0\u00bb, le terme \u00ab\u00a0cheese\u00a0\u00bb d\u00e9finissant autrefois les cr\u00e8mes desserts \u00e0 base de fruits outre Manche, que nos amis Anglais appellent aujourd&rsquo;hui \u00ab\u00a0custards\u00a0\u00bb.<\/p>\n\n\n\n<p>D&rsquo;ailleurs, on utilisait le terme &lsquo;lemon cheese\u00a0\u00bb il y a encore \u00e0 peine 60 ans, dans les r\u00e9gions du nord du pays. En outre, certaines marques de production de lemon curd en pot utilise encore cette appellation, \u00e0 l&rsquo;instar de The Mercers , Pennine Way Preserves ou encore Wilkin &amp; Son.<\/p>\n\n\n\n<p>Allez, apr\u00e8s cette parenth\u00e8se historique et \u00e9tymologique, place \u00e0 la recette&#8230;<\/p>\n\n\n\n<p>Temps de pr\u00e9paration: 15 minutes<\/p>\n\n\n\n<p>Temps de cuisson: 20 minutes<\/p>\n\n\n\n<p>Temps de r\u00e9frig\u00e9ration: 3 heures<\/p>\n\n\n\n<p>Ingr\u00e9dients (Pour 2 petits pots):<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 citrons<\/li>\n\n\n\n<li>4 \u0153ufs <\/li>\n\n\n\n<li>240 g de sucre en poudre<\/li>\n\n\n\n<li>100 g de beurre doux<\/li>\n<\/ul>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"422\" height=\"640\" src=\"https:\/\/entrelapoireetlefromage.com\/blog\/wp-content\/uploads\/2022\/11\/Lemon-Curd-7.jpg\" alt=\"\" class=\"wp-image-10539\" srcset=\"https:\/\/entrelapoireetlefromage.com\/blog\/wp-content\/uploads\/2022\/11\/Lemon-Curd-7.jpg 422w, https:\/\/entrelapoireetlefromage.com\/blog\/wp-content\/uploads\/2022\/11\/Lemon-Curd-7-198x300.jpg 198w\" sizes=\"auto, (max-width: 422px) 100vw, 422px\" \/><\/figure>\n<\/div>\n\n\n<p>Recette:<\/p>\n\n\n\n<p>R\u00e2pez le zeste des citrons, puis pressez-les afin d&rsquo;en r\u00e9colter le jus.<\/p>\n\n\n\n<p>Dans une jatte en inox, m\u00e9langez le jus de citron, le zeste, les \u0153ufs, le sucre et le beurre pr\u00e9alablement coup\u00e9 en d\u00e9s. <\/p>\n\n\n\n<p>Portez un grand volume d&rsquo;eau \u00e0 \u00e9bullition dans une casserole.
